This recipe is real comfort to me because it is a favourite moment when I was sitting down with family sharing great memories with a nice cup of tea and of course this delicious cake!

Chocolate,Coconut and Banana cake This recipe is real comfort to me because it is a favourite moment when I was sitting down with family sharing great memories with a nice cup of tea and of course this delicious cake!

Ingredients                                                                                                                                                                                    150g Self Raising Flour, 150g Margarine Spatula, 150g Caster Sugar, 2 Eggs,   2 tea spoons, 2 tsp Baking powder, 1 tsp Vanilla extract, 100g Cooking Chocolate, 2-3 bananas, 75 g desiccated coconut,  50g Raspberry Jam

Method

1.Heat the oven to 180oC and then grease the bottom of the sandwich tins before lining with parchment paper.

2.Start by weighing out the Self Raising Flour and sieve into the bowl, then adding the Caster Sugar.

3.Weight out the Margarine and then add the 2 eggs.

4.Next weigh and add to the bowl the Cocoa powder,Vanilla Extract and Baking Powder.

5.Weigh the Desiccated Coconut and add to the bowl followed but cutting the banana into small bits.

6.Mix the mixture until all combined together and looking a pale brown consistency.

7.Use a wooden spoon to distribute into the tins and level of with a spatula evenly.

8.Bake for 20-25 minutes until it is ready (To check use a cake tester if it comes out clean it’s cooked and if has mixture stuck needs cooking to another 5-10 minutes)

9.Take out of the oven and leave to cool for 10-15 minutes.10.Melt the jam in the Microwave for 30 seconds and evenly cover the bottom of the cake, then putting the other half on top.11.Meld the chocolate in the microwave for 30 seconds and spread on top of the cake adding chocolate decorations on top.12.Serve with a nice cup of tea!
